It's almost that time of the year again! With Christmas really close there’s hardly time to brush up on your baking skills. Don’t worry, switch to “making” over “baking” for that perfect cake or dessert!

 

That’s right, you heard just that. Cakes and other desserts do not always involve baking. Heard of no-bake desserts? These are the finest recipes that involve half the effort and quarter the commitment yet produce the most exotic results. You’ll probably just need a creative mind and a willing tummy (of course!)

 

Here a compilation of two recipes you can whisk away if baking isn’t your best bet. With that for newsflash, you could do with a little secret:

With that said, let’s look at a few recipes that’s totally easy-peasy; chunky-cheesy. Plus, it’s light for your tummy!

 

Let begin with a no-bake fruit cake which was inspired by Roxana’s home baking. It’s undoubtedly the easiest way to impress your friends and family with only 15mins of preparation time.

All you’ll need is:

2 1/3 cups dried fruit, finely chopped

 

1/2 cup finely chopped nuts

 

3/4 cup fruit juice (Or wine)

 

6 chocolate chip cookies

 

2 1/2 cups cream

 

1/4 cup fine sugar

 

1/4 teaspoon ground ginger (optional)

 

Here’s how it’s done:

  1. Add the fruit into a small bowl. Pour some fruit juice over it and let it soak for 2-3 hours until most of the liquid is absorbed.

  2. Line a plastic wrap and leave 3-5 inches of the plastic wrap hanging on the sides.

  3. In a blender add the cookies and the nuts. Pulse it a few times until it’s finely chopped and set it aside.

  4. In a mixing bowl add the cream and start whisking it at a medium speed. Do so until the cream softens. Slowly add sugar and the spice (if using).

  5. Mix the dried fruits with the whisked cream and if there’s any fruit juice (or wine) left in the bowl, add it to the cream as well. Stir it gently with a spatula until combined.

  6. Sprinkle about half of the cookie nut mixture on the bottom of the prepared pan and arrange it evenly with your fingers to cover the bottom of the pan.

  7. Spoon half the fruit cream mixture on top of the cookie crumbles and spread it out evenly without disturbing the cookie crumbles.

  8. Sprinkle more cookie nut crumbles on the top of the fruit mixture and leave about 2 spoons aside for decorating.

  9. Keep adding layers of the remaining fruit cream mixture topped with the cookie crumbles over the layer of fruit cream.

  10. Sprinkle the leftover cookie crumble on the topmost layer of fruit cream and cover with the plastic wrap.

  11. Freeze the cake for at least 8 hours.

  12. Leave the cake for 15 minutes at room temperature before slicing it. (Also, slice it with a sharp knife to attain the sliced perfection)!

Sometimes drinking your chocolate doesn’t cut it. Bring in the creamy hot chocolate taste into a surprisingly simple cake.

Our no-bake hot choca cake only requires 15 minutes for the preparation and 15 minutes for the “making” process! So, what are you waiting for?let’s begin:

2 c. heavy cream

 

½ c. sour cream

 

½ c. confectioners' sugar

 

½ c. hot cocoa mix (use one without milk powder)

 

1 tsp. pure vanilla extract

 

¼ tsp. kosher salt

 

70 chocolate wafer cookies

 

Here’s how it’s done:

  1. Beat the sour cream, confectioner’s sugar, hot cocoa mix, vanilla extract and salt, using an electric mixer on high until stiff peaks form.

  2. Dab some of the cream mixture on one cookie and place it in the center of the serving platter. Repeat this process with 6 cookies and arrange them around the center cookie.

  3. Spread ½ cup of cream mixture on top and spread it over the cookies leaving ½ inch border around the edge. Place a cookie again in the center of the cream and arrange another 6 cookies around it. Repeat with ½ cup of the cocoa cream and 7 cookies to make 10 layers of cookies totally. Top the whole with remaining cream.

  4. Refrigerate at least 2 hours and up to overnight. Sprinkle with crushed chocolate cookies before serving, if desired.
